Beet dressing recipe!

We love eating salads year-round, but it can get boring. Kick your next veggie dish up with this beet ginger salad dressing, made by vendor Ellen Brown. Ellen grows microgreens, sprouts and other veggies on her farm in Freeville. Her business Dancing Turtle offers fresh salads at market and her dressings are made of local, healthy ingredients. Make her famous dressing at home with the recipe below!
Ingredients:
2 cups olive oil
1 cup apple cider vinegar
1/2 cup raw, local Honey
2 cups water
1 tbsp Kosher Salt
1 lb beets; raw, peeled and cubed
1.5 inch piece of peeled ginger
2 cloves garlic
1/4 tsp cayenne pepper
1/2 lb dry, raw sunflower seeds
(soak the seeds in water 4-6 hrs)
Put all ingredients into a blender and mix until smooth.
Yields about 7 cups. Cut the recipe in half for a smaller volume.
Feel free to adjust honey and salt to taste.
