Ingredients: 1 delicata squash, olive oil, butter, salt, maple syrup
Directions: Preheat oven to 350 degrees. Cut squash in half, length-wise. Use a spoon to scoop out seeds and guts. With the flat side of the squash on the cutting board, cut squash into 1/2-inch slices. Toss with 2 TBSP olive oil and roast squash pieces on a foiled baking sheet for 25 minutes, or until soft and golden brown. Remove from oven and toss with butter. Drizzle with maple syrup and a touch of sea salt you will FALL in love with this snack or side dish!
